If you’re too worn out to prepare an elaborate dinner when you come in from work, you’re not alone. But, relying on take-out will empty your wallet and expand your waist line. If you love the idea of enjoying a home cooked meal, but feel you don’t have the time, you’re in luck. These super simple, quick, and healthy dinners will have you enjoying your evening meal again.
If you don’t already own one, invest in a crockpot. You can prep your easy dinner in the morning, set it on low, and walk in to a house filled with delicious smells, and a meal that’s ready to go!
Prep in advance
Chances are you have more time on the weekends to devote to cooking, so why not prep ingredients – such as chopped veggies – or even make an extra meal or two that you can keep in the fridge for later in the week.
One dish meal
Pasta or quick cook rice are great options for a quick, hearty dinner. Toss frozen veggies right into the boiling water so that they cook along with the pasta, or sauté your prepped vegetables and some diced chicken while your rice cooks. Top with your favorite marinara or a bit of teriyaki or soy sauce, and you’re all set.
Breakfast for dinner
Who says you’re evening meal has to be “meat and potatoes”? Often breakfast items are much quicker and easier to prepare. Scramble up some eggs, make a hearty bowl of oatmeal, blend up a rich fruit smoothie, or make a breakfast burrito with cheese and salsa!
